Guacamole, the recipe edition

Oh.My.GUACAMOLE.

It was so yummy!  And barely made it to the cookout.

Mainly because two avocados pitted, scooped and smashed do not make very much guacamole.  About 1 1/2 cups came out of that.  As well as a slight cut to my thumb because I followed The YouTube's advice sans the white kitchen towel, and Mr Lemon and I were having a {ahem} conversation at the same time.

{Oh, don't you give me that look.  I know you have converstaions too.}

So. Pit, scoop, and mash two avocados to a very very smooth consistency.  Instead of dicing tomato and onion and chopping cilantro, garlic, and chili powder - I added about 1/2 cup of the fresh salsa from Sam's club that I cannot get enough of.  Next I squeezed the juice from half a lime, and salted that guacamole mixture to death.

And then I salted it some more.

Y'all.  Y'ALL.  This was some fine tasting guacamole.  The lime juice and the heart attack grade level of sodium really kicked it up a few notches.

I chilled it for a few hours, and when we got to the cookout I suggested the hostess try it out - she loved it. And promptly realized this guacamole was not going to be enough to go around, so we ate it all before any one else had a chance to realize it was missing.
