Chicken or egg? Or both?

I must be nesting - or on a big chicken and egg kick.

I was suddenly alone in my home for the afternoon today. Mr Lemon took Zesty to see Splenda, and my plans got canceled. After doing all the housework I could choke down, I decided to fix myself some chicken salad. I'm the only one who likes it.

(I guess it's my version of Mom's liver and onions. She's the only one who likes it in the entire known world and when she would announce that was her dinner, it was a clear sign that we would have to a) fend for ourselves or b) find someplace else to be for the duration.)

Here's my recipe. There's no cool video for this, although Nobody clearly thinks that me standing in front of the stove watching eggs boil and chicken boil would be a good time.

Chicken Salad for One

4 frozen chicken tenders
2 eggs, hardboiled and diced
lemon pepper
3/4 cup miracle whip
3 baby kosher dills, chopped finely
1 tablespoon mustard
seasoned salt
pepper
paprika

Boil the chicken tenders in water enough to cover them, and season the water with about 3-4 good shakes of the lemon pepper. Shred the chicken tenders while still hot, it is easier for them to come apart that way. Add remaining ingredients. For the seasoned salt, pepper, and paprika - season to taste. I probably used 1/2 tspn of salt, pepper, and 1 tspn paprika.

Mix it all together - it should not be runny. If it is too stiff for your liking, add just a bit more miracle whip.

Sometimes I add in some pickle juice, but this time I didn't. It was still the most delicious chicken salad I've ever tasted. Zesty ate some, but I think he'll eat anything if I make it a sandwich.

Mmmmmmmm. I'm a big fan of chicken salad. One of my favorite variations is Waldorf - chicken, apples, FINELY diced celery, walnuts and mayo. With a healthy sprinkle of salt. And maybe a tiny touch of horseradish. Seriously delicious.
