This is for Big Mama

Big Mama asked for some easy summertime meal ideas that didn't involve much of an effort. Run over there and check out the plethora of meal ideas!

Chicken Fettucine Alfredo

Grill some chicken tenders, seasoned with steak seasoning or lemon pepper. I use my George Foreman. Boil water, insert fettucine. Steam some broccoli in the microwave. Drain the water (MOM!) off of the fettucine. Pour in the jar of alfredo sauce you forgot you had. Cut up the chicken and add that and the broccoli. Serve with a salad.

This is Splenda's favorite, and she would only be happier with this meal if there was mac 'n' cheese on the side.

(I must admit, I haven't served it with a salad. It just looked a little barebones up there without a fancy schmancy serving suggestion.)

Check out your local kroger or other grocery salad bar. Our Dillon's (Kroger) has grilled chicken on the salad bar, the fat trimmed and ready to eat. I buy that occasionally, break it up into meal sized quantities, and vacu seal it in the vaccuum sealer, and put it in the freezer, so when I want to have alfredo, it is ready to go. I can have this meal on the table in a hurry. The longest part of the meal is cooking the noodles.
